[Nitrate, nitrite, N-nitrozamine contents in milk and milk products]

Statistical data on the contents of nitrates in raw milk in differental areas of Lithuania are presented in the paper. The influence of pasteurization, homogenization and biochemical factors on the content of nitrates in dairy products have been investigated. The dynamics of nitrate content in cheese during the maturing process has been stated. It was determined that the process of formation of cancerogenic nitrozamines was not influenced by the nitrate content in the product.
