Reducing sugar in potatoes and its determination methods

The content of reducing sugar in 85 potato cultivars was examined applying two methods: visually by the colour of crisps and by the glucose test strips (Glucostix). The results of both methods were strongly correlated with the colour of crisps. Application of the glucose test method in potato breeding would allow to select progenies suitable for the production of crisps. Progenies with the glucose content less than 10 mmol lE-1 could be selected for this purpose.
