[Effect of the proportion of solvent to cocoa fruit shell in the pectin extractions]

The effects of the proportion of solvent to cocoa fruit shell in the pectin extractions have been examined. The proportions of solvent to the shell of 2:1, 4:1, and 6:1 were studied in this experiment. The results showed that the highest content of pectin in the extraction was found from the proportion 6:1, with the pectin result of 14.44
