Quadratic rotary combination design was used to determine the optimal conditions for hydrolyzing porcine blood cells by alkaline protease in order to produce blood protein concentrates, and a mathematical model was established. The optimal conditions are as following: pH=8.21, temperature=65 centigrade degrees, enzyme- substrate concentration ratio=4. The optimal duration of enzymatic hydrolysis is 90 minutes under these conditions.
