Growth, consumption of glucose and baker's characteristics of S. cerevisiae on medium with corn starch enzyme hydrolizate free of vitamins were studied. For accelerating the growth and maltase activity supplementary amounts of biotin, inozit and pyridoxal was necessary needed. The lack of this vitamins lead to metabolising of glucose on the glucolisis and ethanol on the medium was accumulating; economic coefficient and baker's characteristics of yeast was negative influenced.
