Food microbiology traditionally relies upon cultivation techniques in assessing the safety, stability and quality of products. While these techniques provide both qualitative and quantitative data on the types and number of microorganisms, they are slow and retrospective in providing information, moreover the results are less reliable because they are influenced by the cultivation conditions.
