Oxidative processes are responsible for the degradation of valuable nutrients. Substances targeted by these processes are primarily lipids, fat soluble vitamins and pigments. In addition they also attack and destroy carbohydrates, amino acids and proteins. The consequence is not only a depressed energy supply, but also the nutrient supply of the body suffers, including fat soluble vitamins (A and E) as well.
