Activities of glucosidase and galactosidase enzymes during fruit development of ten mango varieties

The fruit extract of mango at different maturity stages contained a number of glycosidase. Among the glycosidases studied, á-galactosidase appeared to be predominant followed by a-galactosidase, a-glucosidase and á-glucosidase. The activities of all these enzymes increased with degree of maturity and the activities of a-and á-galactosidases increased more rapidly than a-and á-glucosidases.
