[Properties of the Start starter culture]

It is reported that a new starter for the production of the fermented dairy products is obtained. The "Start" starter provides products with high functional activity and organoleptic properties. The basic properties of bifidobacteria are given and analysed, as well as chemical and physical characteristics of the product fermented by the starter. Based on the starter the production technology of the "Start" bacterial concentrate and fermented dairy products "Simeiny" (Family) and "Biovit" distinguished by high biological activity is developed
