Crotonaldehyde is one of unsaturated aldehydes which may be formed during alkoholic fermentation and it is recognized as undesirable impurity of row spirits because of toxic properties and bed flavour as well. In Polish Standards only total amount of carbonyl substances analysis method is described. So, it was not succeed, the new procedure based on gas chromatography (GC-FID) for crotonaldehyde determination has been developed
