In model testing the influence of activity of selected enzymes and starter culture of bacterial strain Lactobacillus plantarum C on the hydrolysis degrees of grass and alfalfa polisaccharides, expreseed as amounts of water-soluble sugars, was determined. It was found that under the influence of tested enzyme complex with main activities of xylanase, endo-1,4-beta-glucanase on green fodder of grass or alfalfa the polisaccharide content in parts of those plants was lowered while the content of water-soluble saccharides increased in them
