This research was realized with an industrial lot of liquid extract of Ironwort /Sideritis scardica Griseb L./ , destined for the production of soft drinks. The organoleptic properties /limpidity, colour, aroma and taste/,the general physicochemical features /relative density, content in alcohol, dry compounds, titration and real acidity, reducing sugars, total and aromatic aldehydes, superior alcohols and methanol/ and the content of phenolic compounds /total, nonflavonoides and flavonoides/ were studied.
