Staphylococcal enterotoxins (SEs), a family of nine major serological types of heat stable toxins, are a leading cause of food-borne poisoning. In addition, SEs are strong superantigenes that stimulate non-specific T-cell proliferation. They are similar in composition and biological activity, but are identified as separate proteins due to their differences in antigenicity
