The master thesis consists of two parts. The first part presents the bases of the HACCP concept, its development, importance of application and integration of requirements referring to the product quality, while the second part deals with the survey and analysis of conditions in enterprises that served as a sample to build a general model of the HACCP concept for similar technological procedures. The presented HACCP model includes the most important characteristics and directions that such a model should have.
