Content of nitrosamines in foodstuff

Studies were performed in 2002-2004 in the region under control of PSSE Stalowa Wola (Poland). In the total number of 156 samples including 88 pork-butcher's products, 19 canned meat and 49 fresh vegetables were tested. Nitrosamine content in particular samples were for fresh vegetables 819.4 mg/kg, 86.4 mg/kg meat products and 34.1 mg/kg canned meat. Despite statistically significant differences in nitrosamine content, no excessive levels were found
