Influence of different types of vegetable oil on duration of its use in technological process of potato (Solanum tuberosum) chips production and on quality of ready products was analyzed in the conditions of the Republic of Belarus. Soybean or rape oils were essential for production of potato chips with high organoleptic, physical and chemical quality properties. It was offered to apply thermal oils as the heat-carrier for heating vegetable oils. It is shown, that potato chips prepared by means of application of the proposed methods proved to be safe for consumption according to indexes of maintenance of carcinogenic substance - acrilamide.
