Recently, there is a trend in coconut sugar due to the unsatisfactory prices of copra and coconut oil. Technical constraints caused several agribusiness which plan to produce coconut sugar undertake the new method that was different compared to conventional one of smallholder or home industry of coconut sugar. This article emphasized the comparison between two methods of coconut sugar production, especially on technological and smallholder aspects. In order to compare the two methods, data from Lampung, Banyumas and Banyuwangi were used.
