[Specifications and Industrialisation of Buffalo Milk ]. [Arabic]

Buffalos are neglected animals knowing that they have high potentialities in producing milk and meat. Buffalos reached 150 million heads distributed between 40 countries in 19 species. Chemical composition and physical properties of buffalo milk determine its nutritive value and its use in dairy industries. Buffalo milk is rich in proteins and fat as well as ash and lactose. The study aims at gaining knowledge of the constituents of this milk and at studying its physical properties, manufacturing some dairy products and determining the characteristics of butter manufactured from buffalo milk.
