The winter wheats have however, lower baking quality than the spring wheats and the utilization of lager quantities of winter wheat without reducing flour quality is a problem. An improvement in the utilization of domestic wheat production could be obtained through: increased protein content by late application of nitrogen fertilizer; improved protein quality through plant breeding; using baking techniques with less need for high quality; utilization of low protein wheat for special products.
