Contents of dry matter, sugars, carotenes and nitrates were analysed in fresh, blanched and frozen carrot. There was also done an organoleptic evaluation of frozen carrot. The analysed cultivars and lines did not differ significantly as to the contents of dry matter and sugars. The nitrate content was low in all the cultivars and in the year when only 20 kg N/ha were applied the content was very low.
