In the conditions of the Republic of Belarus there was presented a study into improvement of the production technology of potato concentrate as a result of the development of a new technological scheme of multicomponent concentrate based on potatoes and corn, with the possibility of acidification with various biologically active organic acids. The way of reception of a potato (Solanum tuberosum) and corn concentrate, which will allow to develop the technological scheme of reception of a multicomponent concentrate on basis of a potato and corn is offered, to receive the new foodstuff possessing high flavouring and physical and chemical properties. And also it is essential to expand its functionality that can form a basis for creation of the whole spectrum of domestic nonalcoholic and alcoholic drinks of the functional purpose possessing preventive either treatment and prophylactic or medical action.
