For this purpose from each group of animals were taken on 5 carcasses at which the morphological structure has been studied and samples of meat and fat are selected for definition of their physical and chemical properties and chemical composition. The quality of the meat and fat was defined in accordance with methodical instructions of Russian Academy of Agricultural Sciences [8]. Установлено, что использование гибридных хряков специализированных мясных пород, генотипа дюрок × пьетрен в различных вариантах гибридизации не оказывает отрицательного влияния на качество свинины и возможно дальнейшее использование гибридных хряков в системе гибридизации. Исследования проводились в РУП «Научно-практический центр Национальной академии наук Беларуси по животноводству». Объектом исследования являлся трёх- и четырёхпородный гибридный молодняк генотипа (БКБ×БМ)×Д, (БКБ×БМ)×(Д×П), (БКБ×Й)×(Д×П), (Л×Й)×(Д×П), содержащийся в ОАО «Агрокомбинат «Скидельский» филиал «Желудокский агрокомплекс» Щучинского района Гродненской области. Обвалка туш подопытных животных проводилась в условиях убойного цеха свинокомплекса согласно методическим указаниям ВАСХНИЛ [8]. Для этого из каждой группы животных брали по 5 полутуш, у которых был изучен морфологический состав и отобраны образцы мяса и сала для определения их физико-химических свойств и химического состава. Качество мяса и сала определялось согласно методическим указаниям ВАСХНИЛ [8]. В образцах, взятых из длиннейшей мышцы спины через 48 часов после убоя, определяли рН (ед. кислотности), интенсивность окраски (ед. экстинкции), влагоудерживающую способность мяса (%), потери мясного сока (%). В мясе и сале определяли содержание влаги, жира, протеина, золы (%) по ГОСТ 23041-78
