Effect of the non-traditional vegetable oils on fatty acid composition of bread from wheat flour | Влияние растительных масел нетрадиционных видов на качество и жирнокислотный состав хлеба из пшеничной муки

English. The influence of nonconventional types of vegetable oils on quality and fatty acid profile of bread from wheat flour was studied. Wheat, linen, beniseed and thistle seed oil (WO, LO, BO and TO) was added to the dough compounding in the amount of 3%, 5% and 7%. The quality of bread was defined in 16-18 h after baking, and also in 7 days of storage in polypropylene film at the temperature of 22-24 deg C. It was found that the oil type influences bread quality more, than its dosage. The best results were obtained when using TO. The specific volume, shape stability and porosity of the crumb of bead with TO surpassed similar indicators of other products by 8.6-13.5%; 3.8-16.0% and 3.0-5.0% respectively. The amount of mono- and the polyunsaturated fatty acids (FA) in BO, WO, TO, LO was 40.49%; 33.55%; 30.00%; 18.25% and 41.55%; 51.67%; 47.83%; 69.13% respectively. The BO, WO and TO had the maximum amount of linoleic acid (41.55%; 51.67%; 47.83% respectively), and the LO – of linolenic (54.37%). The amount of omega-6 FA in BO, WO, TO and LO was 41.55%; 51.67%; 47.83% and 14.7%. The presence of omega-3 FA was noted only in LO (54.37%). The bread with TO had the most balanced composition of FA (unsaturated FA:monounsaturated FA:polyunsaturated FA – 1.0:1.4:2.9). Consumption of 300 g of bread with nonconventional types of vegetable oils satisfies daily need of the person in polyunsaturated FA for 20-30% including in omega-6 for 14-36%, and in omega-3 (bread with LO) – for 47%. The group composition of FA in bread with LO, WO and TO almost did not change during storage for 7 days. The taste and smell changed slightly, rancid and greasy flavours were not noted. The conclusion is that there is a possibility of storage of these types of products for 7 days. The technical documentation for bread with nonconventional vegetable oils was developed on the basis of the obtained results.

Russian. Изучали влияние нетрадиционных видов растительных масел на качество и жирнокислотный состав хлеба (ХЛ) из пшеничной муки. Пшеничное, льняное, кунжутовое масла и масло из семян расторопши (ПМ, ЛМ, КМ и МР) вносили в рецептуру теста в количестве 3, 5 и 7%. Качество ХЛ определяли через 16-18 ч после выпечки, а также через 7 сут хранения в полипропиленовой пленке при t 22-24 град. C. Установили, что вид масла влияет на качество ХЛ в значительно большей степени, чем его дозировка. Лучшие результаты получены при использовании МР. Удельный объем, формоустойчивость и пористость мякиша у ХЛ с МР на 8,6-13,5; 3,8-16,0 и 3,0-5,0% соответственно превосходили аналогичные показатели других изделий. Содержание моно- и полиненасыщенных жирных кислот (ЖК) в КМ, ПМ, МР, ЛМ составляло 40,49; 33,55; 30,00; 18,25 и 41,55; 51,67; 47,83; 69,13% соответственно. КМ, ПМ и МР отличались максимальным содержанием линолевой кислоты (41,55; 51,67; 47,83% соответственно), а ЛМ – линоленовой (54,37%). Содержание omega-6 ЖК в КМ, ПМ, МР и ЛМ составляло 41,55; 51,67; 47,83 и 14,7%. Наличие omega-3 ЖК отмечено только в ЛМ (54,37%). Наиболее сбалансированный состав ЖК имел ХЛ с МР (НЖК:МНЖК:ПНЖК – 1,0:1,4:2,9). Потребление 300 г ХЛ с нетрадиционными видами растительных масел удовлетворяет суточную потребность человека в ПНЖК на 20-30% в том числе в omega-6 на 14-36%, а в omega-3 (ХЛ с ЛМ) – на 47%. Групповой состав ЖК в ХЛ с ЛМ, ПМ и МР при хранении в течение 7 сут практически не изменялся. Вкус и запах менялись незначительно, прогорклый и осаленный привкусы не проявлялись. Сделан вывод о возможности хранения данных видов изделий в течение 7 сут. На основании полученных результатов разработана техническая документация на ХЛ с нетрадиционными растительными маслами (ТУ 9110-494-05747152-14, ТИ, РЦ).
