shThe factors which affected the content of volatile sulphur compounds in horse radish roots were: type, moisture content, reaction of the substrate, deficit of various mineral components (N, P, Ca, Mg, S, Fe and Mn), genetic (ecotype) and biological factors associated with growth and development of plants as well as length and temperature of the storage period.
