Hydrolysis of oils and fats by the Candida rugosa lipase

Commercial Candida rugosa lipase was used to hydrolyse oils and fats in a two-phase system. Our results show that the lipase hydrolysed palm oil faster than palm kernel oil, beef tallow, corn oil and soybean oil. The lipase seems to hydrolyse palmitic and oleic acids from the triglycerides in preference to other fatty acids. Modification of the lipase structure with polyethylene glycol improved the solubility, stability and relative specific activity of the enzyme in hydrolysis and esterification reactions.
