German. Beschrieben wird ein auf der Resmini-Methode basierender modifizierterMethodenvorschlag, der aufgrund jahrelanger Versuche entwickelt wurde. Mit der Methode kann bereits ein Weichweizenanteil von 1 % exakt und reproduzierbar nachgewiesen werden. Sie ist fuer Durumweizen, -mahlerzeugnissen und Hartgriessteigwaren (max. Trocknungstemperatur 80 Grad C bei 14 bis 21 % Feuchtigkeit bzw. max. Trocknungstemperatur 90 Grad C bei Teigwarenfeuchtigkeiten bis 14 %) anwendbar. [S-91-05044]
