German. Der Uebersichtsartikel informiert ueber den Stand der trans-Fettsaeureforschung: Struktur, Bildung, Analysenverfahren, Vorkommen in Lebensmitteln, Beurteilung der taegl. Aufnahme, Gehalte in humanen Fettgeweben und Koerperfluessigkeiten sowie physiologische Eigenschaften von trans-Fettsaeuren (TFA). Ein Schwerpunktthema sind die konjugierten Linolsaeuren (CLA). Vorgestellt wird der Einfluss von CLA auf die Karzinogenese in in vivo-Versuchen und in humanen Krebszellkulturen, die Krebsinhibierung ueber das Immunsystem sowie weitere physiologische Eigenschaften. Besprochen werden Moeglichkeiten den CLA-Gehalt in Lebensmitteln zu beeinflussen (Fuetterung, Prozessbedingungen).
