Paper presented the results of experimental study concerning the effect of microwave treatment on selected technological properties of wheat grain. To evaluate the results of microwave processing, the changes in following parameters of wheat grain were determined: geometrical dimensions of grain, crushing and shear strength, fineness degree, absolute viscosity of the extract and microbiological purity
