Improvement of the nutritive quality of rice through fortification of dehydrated leaf powders

The nutritive quality of rice fortified with 5 different dehydrated leaf powders (DLPs) was evaluated. The rice fortified with DLPs of Colocasia, Coriander, and Shepu gave 71 to 77 percent PER (protein efficiency ratio) value of a casein control diet. This suggests its importance in the enrichment of a poor rice diet. Tables present data including PER values, proximate analysis, non-protein nitrogen (NPN) content, and protein quality of the DLPs and fortified products.
