The sequence of events in the development of high fructose corn syrup is traced and analyzed from basic discovery and conception of product to commercialization. Topics covered include: background on the sugar industry, corn syrups, detrose, and fructose containing corn syrup; the historical development of enzymatically produced high fructose corn syrups; and, an appraisal of industry performance. Lessons to be learned by management from the innovation of high fructose corn syrup as to research and technology are pointed out.
