Protein efficiency ratio and amounts of selected nutrients in mechanically deboned spent layer meat

Three types of mechanically-deboned spent layer (MDSL) poultry meat were examined and found to have adjusted protein efficiency ratios at or above a standard protein (casein) diet. These MDSL meats were also found to be good sources of calcium, iron, and zinc. Protein levels ranged from 15.39% for MDSL meat from whole spent layers, to 16.55% MDSL meat from spent layer frames with wings. Fat levels ranged from 20.41% for whole birds, down to 16.84% for frames without skin. The MDSL meats tested were found to contain the expected high level of unsaturated fatty acids (principally oleic and linoleic) normally associated with poultry products. (wz)
