Study on safety practices of home prepared food

A random selection of 240 home food preparers was done from rural and urban areas of Ludhiana District (Pb) and enquired about their food safety practices. The results of the study revealed that respondents were having above average performance in following the good food safety practices as they scored 91.48 out of the possible maximum score of 145. The food safety practices followed by the respondents on regular basis were thorough cooking of food, personal hygiene and thorough washing of fruits and vegetables before use. The practices rarely followed by the respondents were washing of hands with soap and water before beginning the food preparation, holding hot foods above 60°C and cold foods below 5°C and fortnightly defrosting of refrigerator. The food safety practices being followed in the urban area were better as compared to the rural areas with the highest score of 105.20 by urban higher income category and lowest score by rural lower income category (78.73).The respondents with high practices scores among various categories were the respondents >45 years (95.74), Post Graduates(107.98)and the respondents having annual family income of more than Rs. 5 lacs (102.04). A significant negative correlation was found between food safety practices and incidence of food borne diseases (p<0.01). This shows that by following good food safety practices there was a decrease in food borne disease incidence.
