Sensory evaluation of navel oranges treated with low doses of gamma-radiation

The effects of low post-harvest doses of gamma irradiation (60-85 Krad) on the sensory and physical characteristics of navel oranges from 2 California locations for disinfestation and to prolong shelf life were examined. The effects were evaluated using both practiced judges and untrained volunteers. The results revealed that the greatest effect was on the degree of blemishing, with lesser effects noted on mouth flavor and odor. Some slight effects on taste, color, texture, and ease of peeling also were detected. (wz)
