Composition of undigested peptide fragments from gluten with regard to bioavailability of essential amino acids

High molecular weight peptides obtained from in vitro digestion of wheat gluten were isolated and analytically characterized. Fifteen peptides containing 6 or more amino acids were isolated and analyzed for amino acid content. These peptides were found to contain about 16, 15, and 13% of the wheat gluten threonine, methionine, and lysine levels, respectively. The presence of other amino acids in these peptides also was reported. (wz)
