Lemon monarda (Monarda citriodora L.) is a decorative, spicy taste and a vegetable of the family Lamiaceae. In Russia it is grown as a spicy-aromatic and medicinal plant. It is also called lemon bergamot, lemon mint, lemon bee balm, as the leaves, stems and inflorescences have a strong smell of lemon. Monarda is often used as an additional ingredient in the preparation of various dishes. During the development of the standard "lemon monarda (greenery). Technical conditions", the basis of the data received by the laboratories of the Federal Scientific Vegetable Center: green, spicy taste and floral crops; standardization, regulation and Metrology. Relevance. Shallot is the universal culture in terms of its economically valuable indicators. Breeders in the south of Western Siberia carry out a lot of research work with the aim of creating varieties for Siberian conditions. Long-term studies have made it possible to select promising samples, and exceeding in their indicators the value of signs of released varieties.Materials and methods. The studies were carried out in field and laboratory conditions on the basis of the West Siberian Vegetable Experimental Station in the Priobskaya zone of the Altai Territory in 2016-2020. Research objects: samples of the nursery of competitive variety testing. Three appreciable forms No. 37, No. 39 and No. 48 passed competitive variety testing and, according to the results of the research, were transferred to the State Variety Testing.Results. Sample No. 39 showed marketable yield, which exceeded this indicator of the standard variety by 23.7% and amounted to 23.2 t/ha. The average weight of the sample No. 39 marketable bulbs was 29.0 g, for the standard variety it was 23.4 g. The content of vitamin C in the bulbs and leaves of the new sample exceeded these indicators of the standard variety by 0.3% and 0.53%, respectively. In 2018, sample No. 37 was transferred to the State Variety Testing. This sample belongs to the early maturing group. The bulbs yield of the new sample during all the years of testing significantly exceeded the yield of the standard variety and amounted to 20.3 t/ha (2016- 2018). Sample No. 48 was submitted to the State Variety Testing in 2020. The excess in bulbs yield of this sample was (2019-2020): 13,3%, leaves – 18,8%. In 2019, the Sharm variety was zoned and entered into the State Register of Breeding Achievements, in 2020 – the Chance variety. Sample No. 48 with the proposed name Pharaon has been undergoing the State Variety Testing since 2021.

Research work is underway to create pumpkin varieties satisfying the requirements of consumers and the processing industry in Bykovskaya Melons and Gourds Experimental Breeding Station. The aim of the research was to develop pumpkin varieties with high content of dry matter and carotene, resistant to stresses and suitable for use in the food processing industry. Romantica is the variety resulted from breeding program, based on comparative characteristics of ‘Romantica’ and standard variety of Volzhskaya Seraya 92. New pumpkin variety ‘Romanctica’ exceeds the standard in contents of dry matter by 1.2%, sugars by 1.34%, sucrose by 1.73%, carotene by 46.44 mg%, yield by 0.5 t/ha. On the resistance to powdery mildew in artificial infection of sort of Romance has surpassed the standard by 11%, score at 0.4.

The results of pumpkin fruits storage in natural environment of storage facilities during six months are presented. The influence of soil type and pumpkin variety on the content of main chemicals and changes of fruit quality during storage has been found. After six month of storage as a result of fruit spoiling, the quality of pumpkin fruits was reduced up to 22,6$24,4% in cv. Krupnoplodnaya and up to 5.9$7.7 % in cv. Kroshka. The excess of nitrates and toxic elements above the maximum permissible values in the fruits of all varieties of pumpkin was not observed.

The aim of the present investigation was development of an efficient technology for obtaining powders from fresh broccoli; determination of the possibility of using domestic production of broccoli as an import-substituting product; development of regulatory documentation for broccoli powders for the food industry. The research was carried out jointly with the representatives of the Federal Scientific cen-ter of vegetable production on an experimental basis in 2016. The domestic Tonus variety of broccoli (Federal Scientific center of vegetable production) and the Maraton F1 hybrid (France), differing in appearance, vegetative period, biochemical and physical characteristics were chosen. Technology of broccoli powder production from domestic and imported products was developed using two methods of drying convection and lyophilization. The gentle drying conditions of broccoli freeze drying compared to convective drying technology provided higher content of both vitamin C and polyphenols in the final powder. Comparative studies of organoleptic and physico-chemical properties of powders obtained from domestic and imported broccoli demonstrated close quality parameters, indicating the possibility of effective domestic broccoli utilization and import substitution. For the first time in the Russian Federation, the "Organization Standard" was developed for regulation of the quality parameters of broccoli powders intended for use in the food industry.
