PROPERTIES OF DRINKING YOGHURT USING DIFFERENT TYPES OF STABILIZERS

Different types of drinking yoghurts were made with different types and concentrations of stabilizers. 6 treatments were made (T1, T2, T3, T4, T5 and T6) using 0.2% and 0.4% of different types stabilizers ( pectin, guar gum, and mixture (1:1) of both pectin and guar gum) for production of other yoghurt drink treatments beside the control without any stabilizers. All treatments were stored up to 14 days at 5±1°C. Drinking yoghurt samples were evaluated for chemical, reholigical, microbiological and sensory attributes. No significant differences were observed in chemical and microbiological properties among control and treated samples. All drinking yoghurt contained levels of (106–107 cfu/g) lactic acid bacteria at the end of the refrigerated storage. Addition of stablizers showed significant differences in viscocitey and serum separation of final product. The effect was more obvious with using 0.2% stabilizer mixture (0.1% guar gum + 0.1% High Methoxy Pectin) than other all treatments. The drinking yoghurt containing 0.2% mix stabilizers (0.1% guar gum + 0.1% High Methoxy Pectin) ranked higher sensory scores than other treatments. The best drinking yoghurt that containing 50% yoghurt, 8% sugar and 42% water should be fortified with 0.2% mix stabilizers (0.1% guar gum + 0.1% High Methoxy Pectin)

This study was carried out to investigate the effect of partial substitution (5, 10 and15%) of wheat flour (72% ext.) by whole meal quinoa flour (QF) on quality parameter of pan bread. QF contained the highest percentage of protein, Lipids, ash and crude fiber. Also, QF contained the highest amount of essential amino acids such as (threonine, methionine, lysine and histidine). From the results, it could be seen that, water absorption and degree of softening increased by increasing the substitution levels, but stability, resistance to extensions and energy of dough decreased. The addition of QF adversely affected on the specific volume of pan bread. The lightness (L*) and yellowness (b*) of pan bread decreased, but redness (a*) increased gradually by increasing QF. Evaluation of the organoleptic properties of pan bread revealed that no significant differences (P≥0.05) between control sample and bread samples contained QF for taste and summitry form. The bread contained QF had higher score for crust color, pore size and overall acceptability than control sample. Hardness (g) of pan bread increased and springiness decreased gradually during storage of bread at (25˚c ±2). The rate of staling of bread contained QF lower than control sample. Gluten – free biscuit made from 100%QF contained the highest percentage of protein, lipids, ash and crude fiber compared to that of corn and rice – quinoa composite flour. The addition of corn and rice flour adversely affected on the thickness, diameter and spread ratio. The highest spread ratio was noticed in the biscuit made from 100% QF. It is worth mentioning that the biscuit made from 100 % QF or that of corn and rice – quinoa composite flour gave the biscuit with sensory acceptable. On the other hand, it could be noticed to that the biscuit contained high level of quinoa flour was darker in compared to another samples.

This study has been conducted to investigate the possibility of using flour of wheat grain var. Research-32, cultivated locally in the Republic of Yemen, in making high quality bread. Moisture content, specific weigh and weight of 1000 grains were determined. Wheat grains of the new cultivars were treated and milled into flour of 72% extraction. Chemical and Rheological characteristics of the extracted flour were tested against those of SNABLE wheat flour (a mixture of wheat grains of different varieties). Physical and organoleptic characteristics of loaf made of wheat flours were also evaluated. Results indicated that wheat grains of Research-32 were characterized by its high specific weight, weight of 1000 grains and extraction rate. Percentages of total protein, wet gluten and water absorption capacity. Research-32 wheat flour was found to be significantly higher (α 0.05) than that of SNABLE wheat flour. Results of sensory evaluation of loaf showed that Bread made of Research-32 wheat flour treated with 0.0% and 0.3% lecithin were higher in organoleptic characteristics than those made of SNABLE wheat flour.
