Today, Ukraine is forced to perform a complex geopolitical task in order to guarantee not only military, but also food security. Therefore, the issue of increasing the efficiency of the meat processing industry, as one of the components of this task, is significant and relevant. The purpose of the article is to substantiate the economic aspects of increasing the efficiency of the functioning of meat processing enterprises of Ukraine as a result of improving the recipe of sausage products in order to reduce their cost price. The research was conducted using general scientific methods and techniques: logical and qualitative analysis and synthesis, monographic method, system-structural analysis method, cause-and-effect analysis method, experimental method, economic-statistical method, calculation-constructive method and method of logical generalization. The results of the research in the form of practical recommendations for reducing the cost of sausage products as a result of changing the cost norms and improving the product formulation can increase the economic efficiency of meat production. In order to reduce the cost of meat products, the recipe of products has been changed due to the rejection of expensive ingredients. The scientific novelty of the research results lies in the development of practical approaches to the study and analysis of dynamic processes in the meat processing industry based on the policy of stimulating demand for competitive products both in the Ukrainian and foreign markets. The article highlights the problems of the current state of the meat industry in Ukraine, the prerequisites and the main causes of this situation. The article deepens practical approaches to improving the recipe of sausage products, evaluates their updated recipe in order to reduce the cost of production and increase its efficiency, which lays the foundation for future research for other types of products | Сьогодні Україна виконує складне геополітичне завдання та повинна вистояти, щоб стати гарантом не лише військової, а й продовольчої безпеки. Особливого значення набуває підвищення ефективності функціонування м’ясопродуктового підкомплексу, як однієї зі складових даного завдання. Метою статті є обґрунтування економічних аспектів підвищення ефективності функціонування м’ясопродуктового підкомплексу України внаслідок удосконалення рецептури ковбасних виробів з метою зниження їхньої собівартості. В статті висвітлюються проблеми сучасного стану м’ясної галузі України, передумови та основні причини виникнення даної ситуації. Наведені статистичні дані про тенденції розвитку м’ясної промисловості та доцільність зменшення витрат виробництва внаслідок удосконалення рецептур. Дослідження проводилось на основі використання загальнонаукових методів і прийомів: логічного та якісного аналізу та синтезу, монографічного методу, системно-структурного аналізу, причинно-наслідкового методу, експериментального методу, економіко-статистичного методу, розрахунково-конструктивного методу й методу логічного узагальнення. Результати дослідження в вигляді практичних рекомендацій щодо зниження собівартості ковбасних виробів унаслідок зміни норм витрат і вдосконалення рецептури продукції дозволяють підвищити економічну ефективність виробництва м’ясної продукції. Наукова новизна одержаних результатів полягає в розробленні практичних підходів до вивчення та аналізу динамічних процесів у м’ясопродуктовому підкомплексі на основі політики стимулювання попиту на конкурентоспроможну продукцію як на внутрішньому, так і на зовнішньому ринках. З метою здешевлення м’ясних виробів рецептура продукції була змінена за рахунок відмови від дорогих інгредієнтів. У статті поглиблені практичні підходи щодо вдосконалення рецептури ковбасних виробів, здійснена оцінка оновленої їхньої рецептури задля зменшення собівартості продукції та підвищення її ефективності, що закладає основу для подальших досліджень щодо інших видів продукції

In Ukraine agricultural mechanical engineering is orientated on the rise of the industrial capacity and the productivity of the technical means. Resource saving technologies, ecological safety and creation of the comfortable working conditions are of primary importance nowadays. Modern agro-industrial production requires the rise in the research potential in the development of agricultural machinery, which is aimed at producing high quality machinery that, in turn, causes the rise in the prices for the new technical means. In resent years Ukraine has got a great amount of foreign agricultural machinery due to government and international credits. The production volume of Ukrainian agricultural machinery has increased due to the funds provided by the state leasing fund. Some scientists insist on the importance of preserving the large farms as this ensures the rise of the efficiency of production. The article provides data on the service life of agricultural machinery in collective farms of Mykolaiv oblast. In 1998 the majority of the tractors (55-79 %) has been in use for more than 10 years whereas in 1990 only 8-22 %. Another problem covered in the article is the reduction in machinery operating personnel's skill. The possible way out of the crisis is the development of collective agricultural enterprises as well as recreation of machinery and technological stations, setting up cooperative corporations with equal initial conditions

The article presents a generalized theoretical model of agricultural co-operation development in Ukraine. The model is based on the analysis of historical development of the cooperation, its current tendencies and scientific forecast of the prospects of the cooperation development in future. Comparison of domestic and foreign cooperation systems is made. The article reports that economic adaptation to the particular market is the prominent trend in the countries with highly developed cooperation movement while Ukraine strives only for the establishment of more or less competitive conditions for the development of the cooperation. The problem of food protein in the food products is one of the most vital nowadays. It is solved mostly by means of combining protein of plant and animal origin. Annual grain legumes as well as oil crops play an important role in solving this problem. Grain legumes provide obtaining the plant protein of high quality, which can be used in food and fodder industry. Annual grain legumes contain by 2-3 times more protein than cereal crops. The protein of these crops is well balanced by aminoacid content and is physically active. It is known to have high nutritive, medicinal and fodder value and is well assimilated in the human organism. The production of grain legume products is not stable in Ukraine because of the climatic conditions, imperfection of crop placing, non-observance of the growing technology and general crisis factors in agro-industrial production. The Ukrainian agricultural economy strives for the increase in grain legume production. This can be achieved through the extention of land under this crops to 1.7 million per hectare, establishing optimal relationship of cereal and grain legumes

Aggravation of the so-called food problem worldwide provides the necessity to intensify the scientific research aimed at studying and practical use of the possibilities to rise the volume of the food industry in Ukraine. The food industry is one of the most important sectors in agro-industrial complex of Ukraine. It is a structure-forming element, an integrator and coordinator of the effective development of agro-industrial production in Ukraine's oblasts. Zhytomyr oblast has favourable natural, economic, research and technical background for the development and functioning of the food industry, which can provide an adequate supply of the wide assortment of high-quality food products of local and export trend. The economic crisis has considerably changed the sector's structure of Zhytomyr oblast's industry, but the food industry has preserved its priority. The part of the volume of production in the food sub-industries of the oblast was 37.8; 99.4 and 28.5 %. Nowadays one of the most vital problems is the problem of industrial products sale that is complicated by the price growth, consumers inability to settle payment, and to get used to the market conditions. Long-term crisis in the economy of Ukraine leads to the far-reaching negative consequences in the agro-industrial sector. The way out can be found only due to the introduction of a market mechanism of the economy. Successful creation of competitive market environment depends on the activization of the innovational activity, i.e. introduction of the scientific and technical, social and economic, as well as administrative innovations. as the Ukrainian agro-industry works under conditions that lead to the destruction of the diversity of breeds and varieties. This causes the reduction in the possibility to adequately react to the change in the climate, diseases of plants and animals.
