Snail eggs as a raw material for the production of a caviar substitute

Snail eggs can be the raw material for the production of a caviar substitute. The substitute varies from the original in caloric value and nutrient content which determine the nutritional value of every foodstuff. The present study aimed to determine and compare the nutritional value and protein quality of eggs from two subspecies of edible snail. The chemical composition of the snail eggs i.e. Cornu aspersum maxima and Cornu aspersum aspersum was determined in accordance with international standards. In order to evaluate the protein quality of the eggs of the two studied snail subspecies, the chemical score (CS), and a reference protein were used. Significant differences in the content of water, ash, and carbohydrates, but comparable protein and fat contents and caloric values were found. The protein in the eggs of the snails was complete by the measure of the model adopted for this study, however, meeting the daily essential amino acid requirements of an adult would require an immense supply of both species’ eggs. Snail eggs of the Cornu genus were characterised by much lower nutritional value in comparison with caviar and caviar substitutes.

The aim of this paper is to give an overview of the presence of biogenic amines, particularly histamine, in various food products, discuss the most important factors influencing their accumulation, and address potential toxicity and safe limits in food. Biogenic amines are natural components of animal and plant raw materials, where they are present at concentrations appearing non-harmful to human health. Their increased content in foods results from the activity of endogenous enzymes or from the microbial decarboxylation of amino acids during controlled or spontaneous fermentation, processing, storage, and distribution. General knowledge of biogenic amines, factors favouring their formation and their safe limits in food are useful in preventing exposure to their toxic effects on the human body. Based on this information, appropriate prophylaxis can be applied, which will consist primarily of maintenance of good hygiene standards of raw materials and products, employment of appropriate processing procedures and upkeep of sanitary food storage conditions.

This study investigated the eggs of Polish-bred edible snails of the Cornu genus as a food and aimed to determine the presence of microorganisms in them of the Salmonella and Listeria genera and ascertain the number of coagulase-positive staphylococci. Raw material, semi-finished products, and the final product were collected during the production cycle. Testing for the presence of Salmonella spp. and Listeria spp. and measuring of the pathogenic staphylococci contamination level were carried out in accordance with ISO standards. Commercial biochemical tests were used for species identification of bacteria of the Enterobacteriaceae family and Staphylococcus genus. An API kit and a PCR protocol were utilised for species confirmation of the microorganisms of the Listeria genus. Neither Salmonella nor coagulase-positive staphylococci were found in any of the studied material. Bacteria of the Listeria genus were found in samples taken at every stage of production; however L. monocytogenes was confirmed in samples of the final product. The absence of Salmonella spp. and Staphylococcus aureus in samples of the final product indicates that the required hygiene standard was maintained in the production process of edible snail eggs. Nevertheless, the presence of L. monocytogenes in eggs of common garden snails may pose a potential risk to consumer health.

Identification of processed animal protein in animal feedstuffs wasperformed under the feed safety programme to ensure that the products used locally to feed the livestock are safe and properly labeled to prevent unnecessary incidence that will affect both animal and human.A “silica-membrane technology” method was applied based on its fast and effective purification of nucleic acids from various matrices. The silica membranes were optimized for high DNA recovery and lowbinding efficiency for impurities. Results from 58 with various kinds of samples showed negative of unwanted processed animal protein.

Samples of feed ingredients were collected from the truck loads that arrived at feed processing unit located in Veterinary College and Research Institute, Orathanadu, Thanjavur, Tamil Nadu, India. Physical examination of collected samples was carried out prior to their chemical evaluation. Chemical evaluation of feed samples revealed that moisture content in maize grain ranged from 8.47% to 17.25% and high moisture was observed in samples received during the monsoon season (September to December). The crude protein content of protein supplements viz., soyabean meal, coconut oil cake, coconut deoiled cake (DOC), groundnut cake, groundnut deoiled cake, delinted decorticated cotton seed cake, sunflower deoiled cake and gingelly oil cake were 45.49, 25.11, 24.47, 36.92, 43.89, 35.36, 30.21 and 29.89 per cent on dry matter basis, respectively. The crude protein (% DMB) and crude fiber (% DMB) content of deoiled rice bran, rice bran and wheat bran were 15.47 and 16.13, 7.55 and 36.26, 14.26 and 9.47, respectively. Due to the high moisture content in maize grain 8.77% of the total truck loads of this ingredient received at the processing unit were rejected. Similarly, of the total truck loads of oil cakes received at the processing unit 20.93 % of soyabean meal, 12.5% of coconut oil cake, 20 % of coconut DOC, 22.22% of cotton seed cake and 33.33% of gingelly oil cake were rejected due to the lower crude protein and higher crude fiber contents. All truck loads of rice bran (100 %) were rejected due to their lower crude protein, higher crude fiber and Acid Insoluble Ash (AIA) content. The study thus revealed that quality control measures are essential to check the entry of poor quality raw materials before processing the feed.
