Potato is an important source of nutrients and bioactive compounds with profitable effect for health, such as antioxidants, vitamins and essential amino acids. The knowledge about metabolite composition of various potato cultivars is necessary to facilitate development of new cultivars with desirable properties. In the present study, the hydrophilic metabolite composition of six potato cultivars with different resistance against potato late blight disease was analyzed. For this, an HPLC-based method was developed and used for the analysis of water-ethanol extracts of freeze-dried potato tubers. Significant differences in concentrations of adenosine, chlorogenic acid, and rutin were revealed. Some other metabolites were found to be cultivar-specific.

Tryptophan (Trp) is an essential amino acid for mammals since they cannot synthesise it. Wheat (Triticum aestivum L.) is a major source of dietary Trp, and wheat high in Trp would thus be very beneficial. This study investigated the impact of location and wheat variety on the content of free Trp and mineral nutrients in wheat grain. Four wheat cultivars from national variety tests on wheat with varying protein contents were selected from seven different locations of Sweden representing different climatic zones and soil contents of trace elements. Grain was analysed for Trp content using reversed phase HPLC. Mineral nutrients were analysed using inductively coupled plasma emission spectrometry. Wheat yield and grain content of nutrients and Trp differed significantly between sites. High N content in grain was correlated with a high content of Cu, Fe and S, and also Ca and Mg. However, it was correlated with a low content of K and Na. Trp content was positively correlated with Na and Zn content and negatively correlated with K/Na and K/(Na+Zn) ratio. The varieties differed in Trp content and the two ratios, but there were no significant differences in yields between the varieties at any location. The results indicated salt stress induction of Trp synthesis, which may protect wheat against salt stress and yield losses.

Both the rowanberries (Sorbus) and the chokeberries (Aronia) belong to the family Rosaceae. The berries of these cultivars are suitable for production of health-food products. The main components in the dry matter of fruits are carbohydrates, primarily sugars. The aim of this experiment was to determine the content of simple sugars and sorbitol in different fresh rowanberry cultivars and chokeberries and to compare the composition of these compounds after freezing and thawing of berries. The experiments were done in the Customs laboratory of the National Customs Board, State Revenue Service (Latvia). The rowanberries were picked in the Pure Horticultural Research centre, and black chokeberries were obtained from farm 'Ceplīši' (rural municipality of Pure). The contents of dry matter and soluble solids were analyzed in fresh berries, and the contents of sugars and sorbitol were analyzed both in fresh berries and in berries after freezing and thawing of 13 different cultivars of rowanberries and one black chokeberry. For determination of the soluble solids content, the refractometric method was used, and for determination of the glucose, fructose, sucrose and sorbitol content, high performance liquid chromatography was used. The results showed that rowanberries and chokeberries contained 3.24-7.24 g 100 gE-1 of sorbitol which was the dominant compound in all investigated berries. The highest content of sorbitol was found in the wild rowanberries and rowanberries Sorbus aucuparia var. sibirica, but fruits of rowanberry×pear 'Alaya Krupnaya' contained the least content of sorbitol. After freezing and thawing of berries, the content of sugars and sorbitol were decreased by 5-23% with some exclusion.

The content of carbohydrates (fructose, glucose, and sucrose) and organic acids (citric acid, succinic acid, malic acid, sorbic acid, and ascorbic acid (vitamin C)) in organically grown vegetables (carrots, parsnips, celeriacs, and red beets) and dried vegetable products were analyzed by the HPLC reverse phase and ion exchange methods. The main carbohydrate detected in fresh vegetables invariably was sucrose (1.29 – 11.17 g 100 gE-1). Fructose and glucose were found in similar ranges (0.09 – 2.47 g 100 gE-1, 0.14 – 3.02 g 100 gE-1 respectively). A similar distribution of carbohydrates was determined in dried products. The highest fructose and glucose contents were found in fresh carrots - 2.47 g 100 gE-1 and 3.02 g 100 gE-1 respectively; but in dried carrot products – 14.53 g 100 gE-1 and 15.43 g 100 gE-1. High amounts of sucrose were found in red beets: 11.17 g 100 gE-1 in fresh samples, and 48.50 g 100 gE-1 in dried products. Malic and citric acids were detected as the main acids of fresh vegetables. Highest citric acid amount was in red beets (266.19 mg 100 gE-1), whereas celeriacs and parsnips had a high malic acid content. The results from this study demonstrated variability and concentration range of carbohydrates and organic acids, wherewith the organoleptic profile of the products. Dried products are considered as a good source of energy.

The major sugars in six cultivars grown in Latvia are analysed. The content of glucose, fructose and sucrose in strawberry, blackcurrant and redcurrant berries was determined by applying the method of high performance liquid chromatography (HPLC). By using the obtained calibration curves, concentrations of diverse sugars were found in the analyzed samples. Fructose or fruit-sugar, the same as glucose, is mainly the source of energy in the human body though it is decomposed faster and easier than glucose. In all the researched berry cultivars, the amount of fructose was the largest, particularly in blackcurrants. Six strawberry, black- and redcurrant cultivars were evaluated as raw materials for industrial production. The investigation involved chemical and sensory analyses of fresh berries. The results indicate that pH and sugars of fresh berries influence their quality. Furthermore, high level of sugar adversely affects taste stability. Taste degradation in berries is parallel to flavour deterioration. It is concluded that the main emphasis should be given to the properties of fresh berries.

Carrots (Daucus carota L.) are a globally important vegetable crop providing a source of important nutritional compounds through their carotenoid content whilst adding flavour and texture to many diets across the world. The current research focuses on the evaluation of sugars, vitamin C and dietary fibre content in ‘Nante’ hybrid carrots. The research was accomplished on fresh in Latvia cultivated carrots harvested in Zemgale region in the first part of October 2011 and immediately used for experiments. Late-bearing hybrids of ‘Nante’ carrots were used for analysis: Nante/ Berlikum, Nante/Maestro, Nante/Forto, Nante/Bolero, and Nante/Champion. The major sugars (fructose, glucose and sucrose) were determined by applying the method of high performance liquid chromatography, vitamin C - by titration with 0.05 M iodine solution, and dietary fibre - using standard method No 985.29. In the present experiments it was found that there are significant differences in the sugar, vitamin C and dietary fibre content between different carrot hybrids. The highest content of total sugars was found in Nante/Maestro and Nante/Champion 7.99 g 100 gE-1 and 7.57 g 100 gE-1 hybrids in fresh weight, respectively. The lowest total sugars content was in Nante/Berlikum hybrid − 4.03 g 100 gE-1. Vitamin C content in carrot hybrid Nante/Maestro was the highest 17.61±0.17 mg 100 gE-1, but in hybrid Nante/Champion - the lowest 8.39±0.17 mg 100 gE-1 of fresh weight. The dietary fibre content in analysed carrot samples ranged from 34.25±0.47 g 100 gE-1 in Nante/Maestro to 25.78±1.54 g 100 gE-1 in Nante/Champion hybrids.

Determination of organic acids in honey samples from Latvian market by high-performance liquid chromatography Honey is a naturally sweet product, which is produced by honeybees (Apis mellifera). Honey is a natural source of antioxidants and has been known to mankind since ancient times. Honey contains approximately 200 different compounds. Organic acids can be used as an indicator to detect the freshness, authenticity and acidity of honey. The aim of this research was to determine and quantify organic acids such as oxalic, L-tartaric, D-quinic, L-malic, L-ascorbic, citric, fumaric and succinic in honey samples from Latvian market u sing high-performance liquid chromatography. The chromatographic separation of organic acids was carried out with PerkinElmer C18 (4.6 mm Í 250 mm I.D, particle size 5 mm) analytical column at the temperature of 35 °C in wavelength at 210 nm. The obtained results showed that the analysed honey samples contain L-tartaric, D-quinic, L-malic, L-ascorbic, citric, fumaric and succinic acids. The concentration of these acids was found to be variable. Oxalic acid was not detected in the analysed honey samples. L-tartaric acid was the main acid in all analysed honey samples.

The field studies were conducted in the years of 2011 and 2014 at the Experimental Station in Osiny, Poland. Triticale (Triticosecale) is a valuable fodder cereal with a high nutritional value of grains. It can also gain importance as a consumer cereal, providing the body with the necessary amino acids. The aim of the study was to determine the influence of precipitation and temperature conditions in the harvest year, agronomic factors (intensive or integrated type of production) and the percentage of cereals in crop rotation (50, 75 and 100%) on the amino acid content of two winter triticale cultivars (‘Pizarro’ and ‘Pigmej’) as well as to determine the nutritive value of the protein: chemical score (CS) and essential amino acid index (EAAI). Our studies have shown that although the amino acid content of winter triticale is strongly genetically determined, it also depends on weather and agrotechnical factors. Precipitation and temperature factors had the biggest effect on the tyrosine (Tyr) content. The contents of essential and non-essential amino acids in triticale grains and EAAI value were higher under intensive technology, with 50% of cereal grains in the crop rotation, and in the traditional cultivar ‘Pizarro’ as compared to the dwarf one ‘Pigmej’. The most important amino acids that limit the quality of protein in the grain are lysine (Lys) and tryptophan (Trp). Using intensive technology, reducing the cereal percentage of cereals in the crop rotation and selecting a proper cultivar, it is possible to maximize the content of the desired essential and non-essential amino acids in the triticale grains, and thereby improve their feed and consumer value.

Honey is a naturally supersaturated sugar solution, which tends to crystallize. The crystallization of honey can lead to unwanted fermentation that can have a negative impact to honey quality. The production of honey powder could be an alternative method to prevent honey from fermentation. Honey powder could be used as alternative substitute to liquid honey that would allow to use this product more widely in the food industry. α-amylase activity is one of the most important parameters to evaluate the quality of honey. The aim of this study was to investigate the effect of freeze-drying and spray-drying on honey α-amylase activity. Detection of α-amylase activity was carried out by spectrophotometric method. High-performance liquid chromatography was used to determine the content of hydroxymethylfurfural in the powders. The obtained results showed that both drying methods had a negative impact to the enzyme activity in the samples. The lowest activity of α-amylase (8.3 DN) was measured in the spray-dried honey powder. Concentration of hydroxymethylfurfural (HMF) in the powders did not exceed required concentration 40 mg kgE−1.

Tryptophan is a precursor for the production of skatole and indole in the large intestine of pigs. Accumulation of these compounds in adipose tissue causes on objectionable odour in meat from entire male pigs. Potential market impact illustrates the importance in developing an accurate method of determining skatole and indole content in adipose tissue. In the present study, a method is described for determination of skatole and indole concentrations by liquid chromatography combined with mass spectrometry (LC-MS) using atmospheric pressure chemical ionization (APCI). The optimization of chromatographic and APCI conditions is reported. This method showed excellent linearity over the concentration range tested (from 10 to 1000 ng mlE-1 of liquefied fat for both skatole and indole).
