Polyphosphate "Hamine", ascorbic acid and sodium nitrate show an inhibitory effect on the growth of Tetrahymena pyriformis in vitro. Therefore, the presence of these compounds in meat or meat products makes difficult the objective evaluation of nutritive value of meat proteins by the use of the protozoon
