The authors have made a brief survey of Polish and foreign examinations of chemical constitution of beer which is the problem intriguing both technologists and consumers of beer, especially as regards quality and healthfulness of the drink. The following groups of compounds have been discussed: superior alcohols, esters, carbonyl compounds, sulphur compounds, nitrosoamines, pesticides and metals and sources of creation of the above mentioned in beer
