Study on the technological suitability of brussels sprouts for freezing

It was found that Acropolis F1 hybrid, among the other cultivars had the highest dry matter, vitamin C and chlorophyll content, and it proved best fit for freezing. A correlation between vitamin C and dry matter content was found (r=0.841) as well as between losses of vitamin C and vitamin C content in fresh sprouts (r=0.939). Analyses of ten hybrid varieties indicated higher amount of chlorophyll "a" in comparison to chlorophyll "b". Small heads (1.5-2.0 cm) contained higher amounts of dry matter, vitamin C and chlorophyll than medium size heads (2.0-3.5 cm)
