The ways of assuring the good quality of sheep milk

The author reviews the technological conditions of hygienic sheep milk production in Hungary which were developed by him and which have been applied by some of the big agricultural farms. Between 1987 and 1988 he carried out experiments in a farm where 1550 sheep were milked with milking machine in order to develop the useful technology of producing and treating good quality sheep milk. In the course of his survey he made the following establishments. To assure the physical purity of milk the filter paper should be replaced after the milking of 100-150 sheep. For the cleaning of the surfaces having direct contact with milk the best method is the application of alkaline and acid washing by turns and in the case of acid washing 0.1-0.2 per cent peracetic acid disinfecting solution should be used simultaneously. The washing time, concentration and temperature, etc. should be determined individually, in every farm, on the base of the tests made to register when practical sterility has been achieved. After 4-hours milking it is advisable to introduce a washing stage, as the contamination of the surface having direct contact with milk becomes so great that it may jeoperdize the production of good quality milk.
