Study of agitated thin film evaporator and ultrafiltration process for pre-concentrated soy milk in the production of soy milk powder

This project compared the ultrafiltration membrane process with the agitated thin film evaporator for the preparation of concentrated soy milk for producing soy milk powder. On the basis of protein extraction efficiency, the feed solution was prepared using full fat soy flour to water ratio of 11:100. In the experiment to study the effect of operation parameter on the production of concentrated soy milk by the agitated thin film evaporator, the suitable blade speed was 6.6 meters/second. The overall heat transfer coefficient at this speed is dependent on the temperature difference between the steam (heat source) and the soy milk temperature, and can be expressed by the following equation, U=1.1x10(exp. -6)(delta T)3.49 (Kw/sq. m-deg. K) in the range of feed rate used in the studies, there was no appreciable effects on the heat transfer coefficient. The suitable flowrate and pressure for the ultrafiltration membrane process were determined, they were found to be 1.6 lits/sec and 6 bar, respectively. The concentrated soy milk form both processes were spray dried. The quality of soy milk powder were the same. Cost estimation for producing concentrated soy milk (12-18 % by weight) at the rate of 500 kg/hr of soy milk (6.5 % by weight) showed that the ultrafiltration membrane process was advantageous over that of the agitated thin film evaporator.
