The influence of molasses quality on the yeast and alcohol technology

In the present work it was studied the effect of different concentration of acetic acid and butyric acid on the parameters of growth (generation time and specific rate of growth) of Saccharomyces cerevisiae. A general conclusion could be that volatile acid at concentration found in molasses has a negative effect on both the growth parameters. Insecticides indicate negative effect on metabolic activities and lead and cadmium proved to have extremely negative effects on metabolic activities of Saccharomyces cerevisiae.
