Effects of evaporative cooling condition on the postharvest life of tomato and sweet pepper fruits

Evaporative cooling condition of low temperature and very high relative humidity (RH) markedly prolonged the postharvest life of tomato and sweetpepper fruits harvested at the mature green stage. Fruit weight loss and shrivelling were effectively minimized. Ripening was also retarded particularly in sweet peppers. However, decay developed and was pronounced at the ripe stage. On the other hand, the fruits stored under ordinary room condition had a postharvest life of about 2-4x shorter than those stored in evaporative coolers. This was due mainly to rapid shrivelling as a consequence of low RH, high temperature, and high vapor pressure deficit. In sweet pepper, more than 90 percent of the room-stored fruits did not ripen fully before reaching the limit of marketability
