The fate of Escherichia coli 01.57:H7 in raw milk

The results showed that Escherichia coli 0157:H7 survived in the artificially contaminated raw milk at 7 deg C and 18 deg C for more than 21 days and at 20 deg C for 14 days. During storage of milk at 7 deg C the decrease in Escherichia coli 0157:H7 numbers was slightly lower in the first 3 days, than in the milk kept at 18 deg C and 20 deg C. After 7 days the increase in Escherichia coli 0157:H7 in raw milk stored at 7 deg C was higher than in raw milk kept at 18 deg C and 20 deg C. In parallel to the change of Escherichia coli 0157:H7 counts, there was a change in total bacterial counts. During storage of the milk at 7 deg C the pH decreased from 6.56 to 5.58. During the storage milk at 18 deg C, the pH decreased from 6.56 to 3.97. In the milk kept at 20 deg C, the pH also decreased from 6.56 to 3.94.
