Buckwheat (Fagopyrum esculentum) is an alternative, small-scale grown cereal with a high dietary value. Buckwheat is a good source of proteins of high quality and energy. It contains 12-15 % of proteins rich of albumins and globulins, and short of prolamins. Starch content of buckwheat grains is 55-70 % in dry matter. Buckwheat can be an unique source of mineral compounds and rutin for the Czech population. Rutin (quercetin-3-beta-rutinoside) is related to bioflavonoids. These compounds have positive influence on hemic capillary fragility and have antioxidant activity.
