The aim of this work was to review the techniques of anaesthesia used in aquaculture and their organic responses in relation to the pharmacokinetic and pharmacodynamic activity of the substances. The AA consider the qualitative and hygienic implications related to the human consumption of fishes stunned and slaughtered by anaesthetics, also in the light of the new European regulations concerning food safety
