The influence of different nitrogen fertilization doses on the quality of some spring cereal crop cultivars was aim of the study. Two factors were analysed in the experiment: the effect of nitrogen dose and spring cereal crop cultivars. The increase of nitrogen dose caused a systematic increase of proteins in spring crops grain. The increase of the dose to 160 kg/ha caused a increase of gluten content. The rate of gluten dissolution was the highest after application of 120 kg N/ha
